The recipe was easy to follow and very quick with the aid of my rice cooker and pressure cooker. It calls for half of an onion. I put the remaining half in my stock bag in the freezer. Next time I will caramelize the remaining half of the onion to sprinkle on top.
This really was a great dish. We usually only like our spinach raw. This opened us up to some new spinach possibilities.
