Samosas

I used the samosas recipe from Vegan with a Vengeance today. I'm pretty sure that my oven was on for a hour before every thing was ready to be put in. I made a note in my book to ignore her instructions on preheating.

Other then that, these were pretty good. They have a stronger mustard seed flavor then many of the samosas that I've had but that was ok. I can always adjust flavorings. The samosas I made from The Vegan Lunchbox were so incredibly bland. The filling was barely off white. The filling from VWAV was a nice yellow with plenty of vegetables. I used green peas and not edamame. 1. I love green peas. 2. I hate edamame. So it really was no contest.

The dough turned out well and was pretty easy to roll out. Obviously nothing is the same baked as it is fried but I would make these again. The dough from The Vegan Lunchbox was so soft that after I rolled it out it kept ripping every time I tried to lift it up. In the end I had to give up on that dough recipe and use one from a different book. Even though the VWAV dough is baked it still is a little bit flaky like the fried ones are.

All in all it was a successful venture. I like that these freeze well as they would be a quick and easy snack.

I made samosas with peas and potato. That is my favorite combo. The dough was just flour, salt, and oil. I'll have to try the VWAV one sometime soon, as they usually go over well. I always feel like they are so time consuming, and then not a full meal. Do you have any serving recommendations?

I didn't make the sauce because we aren't into that stuff but I made some Indian rice to go along with it. I did it in the rice cooker. It was Indian yellow rice.
1T oil
2T earth balance
2c basmati rice
2t turmeric
2 1/2c stock
1/2t salt

Melt the earth balane with the oil and then add the rice. Stir every once in awhile for ten minutes. Add the rest of the ingredients and let it cook. When it's done cooking let it sit 10 minutes.

You don't need a rice cooker to make it.

Then a serving of veggies and that's about it.

Curious why you hate edamame? i just tried it for the first time about a year ago and now i really like it. Wondering what happened that you have an aversion to it? i am like that with cilantro/coriander myself...

I don't care for the flavor and I don't like it's toothsomeness if that is a word.

My Pakistani next door neighbor makes her samosas by wrapping the filling in flour tortillas as a shortcut.
