Here's a picture of the "chicken" nuggets that I made tonight with dinner. I had some frozen "chicken" tender seitan in the freezer that I broke into pieces. I then rolled them in whole wheat flour, dipped them in soy milk, then rolled them in bread crumbs. They were friend for a few minutes on each side.
The kids were thrilled. I like them better the next day. I made a bunch and tomorrow will throw them in the toaster oven. They aren't as greasy then and have better mouth feel in my opinion.
At least I have the camera back now.
